Editorial: January is a Month of New Beginnings

January is the month of “new beginnings” for most people. New Year’s resolutions have been made—some verbally and some kept to ourselves—just in case we have to make amendments. Hopefully, getting and/or staying healthy is somewhere at the top of your list. Diseases caused by obesity are rising at astronomical rates. Healthy diet and weight loss are two of the most beneficial things you can do to heal disease. Notice that I said “healthy”. You can lose weight and not achieve health. Fad diets are usually not balanced and even though you will lose weight, your body can become deficient in many vitamins and minerals, which can bring on a whole new set of health problems.

(January 1, 2004) Occasionally I'm asked why a recurring theme in my reporting and writing in recent months and years has been socialized medicine and concerns about the ever expanding role of government in both conventional and alternative medicine.

First, it should be noted that I have bona fides as a participant in the field, and not only as a critic or a curmudgeon. During more than two decades of involvement with alternative medicine (primarily as an investigative journalist), I have volunteered or have been invited to participate in a variety of official government inquiries, commissions, and panels investigating, writing reports on, or otherwise exploring the field of alt med (and more recently, its latest incarnation, the officially sanctioned "complementary alternative medicine"). In all of these efforts, including my contributions to the Office of Technology Assessment's 1990 study Unconventional Cancer Treatments and my significant contributions as a member of two of the first program advisory panels of the then new NIH Office of Alternative Medicine (in 1992-93), I approached the work in good faith and with my usual openness, seriousness, and enthusiasm.

Meanwhile, many of the articles I was writing documented the negative role that governments (federal, state, and local) were playing in terms of disfavoring and sometimes outright suppressing innovative alternative medicine options and their proponents. It was, alas, the experience over several decades of participating in the myriad government projects that deepened my suspicion of the government's role in the field.

Along the way, I devoted considerable time to investigating and blowing the whistle on developments like the Clintons' ambitious plans a decade ago for "national health care reform." Many people working in the field of alt med naively championed the Clintons' and other politicians' efforts to nationalize American health care, assuming that because these people came of age during the Sixties, they would "get" the need for and the importance of alternative medicine. Think again.

Today, as I look around, and the start of a New Year always seems a good time to take stock, most of the signs are worrisome if not ominous. Among the concerns:

1. All nine candidates for the Democratic Party's nomination for president support some form of centralized, compulsory national health care with no freedom to opt out.

2. For the first time, in 2003, the Republican Party, following the lead of President George W. Bush, promoted a significant (in fact, the most significant ever) expansion of Medicare, a mandatory federal program (a classic example of statist socialism, really) for American seniors' health care.

3. The federal role in alt med via burgeoning agencies like the NIH's NCCAM (National Center for Complementary and Alternative Medicine) and the National Cancer Institute's OCCAM (Office of Cancer Complementary and Alternative Medicine) is expanding exponentially with results that, at best, seem questionable.

4. Governments are encouraging the licensing and regulating of alt med professions, particularly naturopaths. Independent observers, however, point to increased costs, watering down of core natural healing principles, over regulation of therapies and their practitioners, requirements that naturopaths work as less than equals with MDs, and other negative results that inevitably accompany such actions. Last summer, a naturopath with a half century of experience told me that, essentially, in light of the developments at hand, naturopathic medicine as we knew it "is dead."

5. The Food and Drug Administration's December, 2003 ban of ephedra in nutritional supplements, notwithstanding any substantive issues with that particular substance, represents the opening salvo in a new campaign to revise the 1994 DSHEA (Dietary Supplements Health and Education Act) and give greatly expanded powers to the government to re regulate all nutritional and herbal supplements, taking decision-making and freedom to choose out of the hands of consumers.


6. Hand in hand with expanding government involvement in medical care is a rapid diminution of personal privacy and the monitoring and permanent, centralized electronic databasing of everyone's most personal and private information, including one's cradle to grave medical history, collected by the government by law now from birth.

7. Conventional medicine, notwithstanding that it allows the "integration" of some lightweight and essentially non-threatening "CAM" modalities, constantly entrenches its psychological and physical hold and monopoly on the American public (think of last year's SARS hysteria, last month's flu hysteria and the hyper-promotion of questionable vaccinations, and the ultimate institutionalization of the HIV-causes-AIDS myth/hypothesis).

Among the questions that should be asked about each of the above developments are: Does it empower individuals to make well-informed decisions, free of outside influence, propaganda, and intimidation, about their own personal choices for the prevention and treatment of illness? And then to act on those decisions? Does it expand or threaten medical pluralism and autonomy? And does it encourage and allow a level playing field and a free marketplace of ideas for competing, credible alternative and innovative - if officially unapproved - therapy options?

Close attention to the facts involved in points 1-6 above confirms that the answers are an unequivocal "No."
Alternative (both truly traditional and new wave innovative) medicine has achieved its current status and popularity within the constraints of a partial, or regulated, free market, and while constantly having to play a cat and mouse game with the government powers that be like the FDA, an often hostile mainstream media, and a historically adversarial and unbelievably powerful and influential medical Establishment.

Starting in the early 1980s, with momentum accelerating a decade later, the powers that be began accommodating alternative med or, more accurately, certain self-selected leaders of alt med were being co-opted. The Establishment could no longer overlook the enormous commercial potential that alt med was starting to demonstrate.

A classic strategy of Establishments is to bring all of their resources to bear and to switch tactics virtually overnight - a previous adversary, in this case alt med, is suddenly welcomed into the official club (sort of), while the Establishment retools itself to embrace the adversary - but in reality co opting, watering down, renaming (to "CAM"), and ultimately diminishing if not outright destroying the alternative. Today, in fact, there is actually an alt med Establishment, approved of by the official conventional medical Establishment. In many ways, the alt med Establishment has come to mimic its much bigger brother.

Today, we see scores of leading allopathic hospitals (including one in particular - a leading conventional cancer facility in New York City) and a majority of medical schools establishing with much PR fanfare departments of alternative or "integrative medicine." Does anyone think that American cancer patients today are really getting access to primary alternative medical options via such programs?

Meanwhile, promising non-toxic cancer treatments like 714X languish in the federal medical bureaucracy. At one time, for example back in the 1970s, the Establishment would simply have suppressed outright something like 714X. These days, in light of alt med's visibility and popularity, a more sophisticated and subtle response is called for. In the spring of 2001, the alt med department at the National Cancer Institute promised to study 714X (or, at least preliminarily, patients who used it), purportedly in order to start the process of answering once and for all the question of does 714X have any value. Three years, and 2 million American cancer deaths, later now, an NCI panel, after repeated delays, has still not even been able to come to "consensus" on what to think of and how to evaluate the records of a small handful of patients who used 714X - the first step in an arduously long process of possibly studying 714X in a future prospective clinical trial (don't hold your breath waiting for that to ever happen).

As journalist Linda Ellerbee used to say, "And so it goes." Another cliché might be, "The more things change, the more they remain the same." Keep them in mind the next time you see the avuncular gaze of alt med gurus like Dr. Andrew Weil or Dr. Deepak Chopra staring out at you from the cover of Time magazine.

And also, please remain skeptical as the avalanche of conventional medical and medical-political stories that are sure to happen this year begin to hit the news cycles. Expect to see at least some of them reported on, and factually deconstructed, here in the months ahead. It's a thankless job, but somebody has to do it.

There are no “bad” foods, right? Only food you should eat in moderation? Well, not really. The following foods are so bad for your body that I really can’t see any reason to eat them. Not only do they have zero nutritional value, but they also give your body a healthy dose of toxins, which should make the idea of eating them really hard to swallow.

Doughnuts

Doughnuts are fried, full of sugar and white flour and most all varieties contain trans fat. Store-bought doughnuts are made up of about 35 percent to 40 percent trans fat. An average doughnut will give you about 200 to 300 calories, mostly from sugar, and few other nutrients.

It’s too bad that Americans view doughnuts as a breakfast food as, nutritionally speaking, eating a doughnut is one of the worst ways to start off your day. It will through off your blood sugar and won’t stay with you so you’ll be hungry again soon. You are better off eating no breakfast at all, or better yet grabbing a quick glass of Living Fuel.

Soda

One can of soda has about 10 teaspoons of sugar, 150 calories, 30 to 55 mg of caffeine, and is loaded with artificial food colors and sulphites. I can't think of any good reason to ever have it. The diet varieties are also problematic as they are filled with harmful artificial sweeteners like aspartame.

Studies have linked soda to osteoporosis, obesity, tooth decay and heart disease, yet the average American drinks an estimated 56 gallons of soft drinks each year. Plus, drinking all that sugar will likely suppress your appetite for healthy foods, which pave the way for nutrient deficiencies.
Soft drink consumption among children has almost doubled in the United States over the last decade, which is not surprising considering that most school hallways are lined with soda-filled vending machines.

Schools often make marketing deals with leading soft drink companies such as Coca-Cola from which they receive commissions--based on a percentage of sales at each school--and sometimes a lump-sum payment, in exchange for their students’ health. School vending machines can increase the consumption of sweetened beverages by up to 50 or more cans of soda per student per year.

If you routinely drink soda--regular or diet--eliminating it from your diet is one of the simplest and most profound health improvements you can make.

French Fries (and Nearly All Commercially Fried Foods)

Potatoes are bad enough when consumed in their raw state, as their simple sugars are rapidly converted to glucose that raises insulin levels and can devastate your health. But when they are cooked in trans fat at high temperatures, all sorts of interesting and very unpleasant things occur.
Anything that is fried, even vegetables, has the issue of trans fat and the potent cancer-causing substance acrylamide.

Foods that are fried in vegetable oils like canola, soybean, safflower, corn, and other seed and nut oils are particularly problematic. These polyunsaturated fats easily become rancid when exposed to oxygen and produce large amounts of damaging free radicals in the body. They are also very susceptible to heat-induced damage from cooking. What is not commonly known is that these oils can actually cause aging, clotting, inflammation, cancer and weight gain. It is theoretically possible to create a more “healthy” French fry if you cook it in a healthy fat like virgin coconut oil. Due to its high saturated fat content, coconut oil is extremely stable and is not damaged by the high temperatures of cooking. This is why coconut oil should be the only oil you use to cook with.

I am fond of telling patients that one French fry is worse for your health than one cigarette, so you may want to consider this before you order your next ‘Biggie’ order.

Chips

Most commercial chips, and this includes corn chips, potato chips, tortilla chips, you name it, are high in trans fat. Fortunately, some companies have caught on to the recent media blitz about the dangers of trans fat and have started to produce chips without trans fat.
However, the high temperatures used to cook them will potentially cause the formation of carcinogenic substances like acrylamide, and this risk remains even if the trans fat is removed.

Fried Non-Fish Seafood

This category represents the culmination of non-healthy aspects of food. Fried shrimp, clams, oysters, lobsters, and so on have all the issues of trans fat and acrylamide mentioned above, plus an added risk of mercury.

Seafood is loaded with toxic mercury and shellfish like shrimp and lobsters can be contaminated with parasites and resistant viruses that may not even be killed with high heat. These creatures, considered scavenger animals, consume foods that may be harmful for you.

Eating these foods gives you a quadruple dose of toxins--trans fat, acrylamide, mercury and possibly parasites or viruses--with every bite.

If you have a taste for seafood, there’s an easy solution. It’s best to avoid your local fish fry and try the only fish I now eat--the delicious wild red Alaskan salmon that was proven through independent lab testing to be free of harmful levels of mercury and other contaminants.

AIR FRESHENERS: Most air fresheners interfere with your ability to smell by coating your nasal passages with an oil film, or by releasing a nerve deadening agent. Known toxic chemicals found in an air freshener: Formaldehyde: Highly toxic, known carcinogen. Phenol: When phenol touches your skin it can cause it to swell, burn, peel, and break out in hives. Can cause cold sweats, convulsions, circulatory collapse, coma and even death.

AMMONIA: It is a very volatile chemical, it is very damaging to your eyes, respiratory tract and skin.

BLEACH: It is a strong corrosive. It will irritate or burn the skin, eyes and respiratory tract. It may cause pulmonary edema or vomiting and coma if ingested. WARNING: never mix bleach with ammonia it may cause fumes which can be DEADLY.

CARPET AND UPHOLSTERY SHAMPOO: Most formulas are designed to over power the stain itself, they accomplish the task but not without using highly toxic substances. Some include: Perchlorethylene: Known carcinogen damages liver, kidney and nervous system damage. Ammonium Hydroxide: Corrosive, extremely irritable to eyes, skin and respiratory passages.

DISHWASHER DETERGENTS: Most products contain chlorine in a dry form that is highly concentrated.# 1 cause of child poisonings, according to poison control centers.

DRAIN CLEANER: Most drain cleaners contain lye, hydrochloric acid or trichloroethane. Lye: Caustic, burns skin and eyes, if ingested will damage esophagus and stomach. Hydrochloric acid: Corrosive, eye and skin irritant, damages kidneys, liver and digestive tract. Trichloroethane: Eye and skin irritant, nervous system depressant; damages liver and kidneys.

FURNITURE POLISH: Petroleum Distillates: Highly flammable, can cause skin and lung cancer. Phenol: (see Air fresheners, Phenol.) Nitrobenzene: Easily absorbed through the skin, extremely toxic.

MOLD AND MILDEW CLEANERS: Chemicals contained are: Sodium hypochlorite: Corrosive, irritates or burns skin and eyes, causes fluid in the lungs which can lead to coma or death. Formaldehyde: Highly toxic, known carcinogen. Irritant to eyes, nose, throat, and skin. May cause nausea, headaches, nosebleeds, dizziness, memory loss and shortness of breath.

OVEN CLEANER: Sodium Hydroxide (Lye): Caustic, strong irritant, burns to both skin and eyes. Inhibits reflexes, will cause severe tissue damage if swallowed.

ANTIBACTERIAL CLEANERS: may contain: Triclosan: Absorption through the skin can be tied to liver damage.

LAUNDRY ROOM PRODUCTS: Sodium or calcium hypocrite: Highly corrosive, irritates or burns skin, eyes or respiratory tract. Linear alkylate sulfonate: Absorbed through the skin. Known liver damaging agent. Sodium Tripolyphosphate: Irritates skin and mucous membranes, causes vomiting. Easily absorbed through the skin from clothes.

TOILET BOWL CLEANERS: Hydrochloric acid: Highly corrosive, irritant to both skin and eyes. Damages kidneys and liver. Hypochlorite Bleach: Corrosive, irritates or burns eyes, skin and respiratory tract. May cause pulmonary edema, vomiting or coma if ingested. Contact with other chemicals may cause chlorine fumes which may be fatal.

OTHER NASTY THINGS THAT ARE AROUND YOUR HOME

PESTICIDES: Most pesticides have ingredients that affect the nervous system of insects. Dimpylate: Better known as Diazinon, extremely toxic. Impairs the central nervous system. Chlorinate Hydrocarbons: Suspected carcinogen and mutantagen. Accumulates in food and in fatty tissue. Will attack the nervous system. Organophosphates: Toxic and poisonous. If you can smell it, your lungs are absorbing it.

FLEA POWDERS: Carbaryl: Very toxic, causes skin, respiratory and cardiovascular system damage. Chlordane: Accumulates in the food chain, may damage eyes, lungs, liver, kidney and skin. Dichlorophene: Skin irritation: May damage liver, kidney, spleen and central nervous system.

LICE SHAMPOO: Especially vulnerable are children. Lindane: Inhalation, ingestion, or ABSORPTION through the SKIN causes vomiting, diarrhea, convulsions and circulatory collapse. May cause liver damage, stillbirths, birth defects and cancer.

CAR WASH AND POLISH: Petroleum Distillates: Associated with skin and lung cancer, irritant to skin, eyes, nose and lungs. Entry into the lungs may cause fatal pulmonary edema, most marked Danger, Harmful or Fatal.

TAR AND BUG REMOVER: Contains XYLENE and PETROLEUM DISTILLATES.

Warning terms used are significant:

DANGER - Harmful or fatal if swallowed. A taste to a teaspoonful taken by mouth could kill an average sized adult.

WARNING - Harmful if swallowed. A teaspoonful to an ounce taken by mouth could kill an average sized adult.

CAUTION - Harmful if swallowed. An ounce to over a pint taken by mouth could kill an average sized adult.

Ten Healing Foods To Buy Organic

There are some key aspects of foods' nutrition and healthfulness to consider when choosing healing foods – we want ones that are high in supportive nutrients and that are clear of toxic chemicals. Consuming foods as they are grown from Nature is where to begin – fresh fruits, wholesome vegetables, hearty whole grains, lively legumes, nutritious nuts and seeds, some calming low-fat dairy, and non-toxic animal proteins, from eggs to flesh if these are desired and feel right for you. Then, make sure the main foods you eat are not filled with additives or exposed to pesticides and other chemical sprays, or contaminated in other ways, such as from the water, soil, or industrial treatments.

The key foods to buy organically grown and/or manufactured from organic ingredients are:

Those that are commonly heavily treated, such as strawberries and animals;
Those where you consume the parts that are sprayed, as in leafy greens or broccoli;
Those that you consume frequently, whereby you'll get higher accumulated exposure over time, as in apples or bananas.
Ideally, our entire diet could be made up of wholesome, healthy organic and clean foods.
My list for Ten Healing Foods To Buy Organically Grown includes:

Strawberries
Strawberries are red and energizing, rich in vitamin C and carotenoids (beta-carotene and others). But this fruit is the most heavily contaminated produce food in the U.S., according to data from a number of environmental groups, including a 1993 study by the Environmental Working Group (EWG of Washington, DC) and an analysis by the Pesticide Action Network of North America (PANNA). Strawberries in California are treated with more than 300 pounds of pesticides an acre, and some areas of the country use up to 500 pounds per acre. As a comparison, conventional farming currently uses about 25 pounds of pesticides an acre on the average crop. Also, some growers may be spraying the harvested strawberries for shipping. This adds to the amount of chemical concentration in the fruit. Strawberries were also found to have the highest level of hormone-affecting pesticides, including benomyl, vinclozolin, and endosulfan. Methyl bromide is another common toxic spray used on strawberries. Note that out-of-season strawberries may be even more heavily treated because they come from other countries and are sprayed before shipping.

Leafy Greens, such as Lettuces, Spinach, Kale, and Chard
These foods are considered vital and nutritious. They contain folic acid as well as calcium, iron and other minerals. However, sprayed chemicals tend to remain on the leaves of these vegetables, which is potentially more harmful since we eat those leafy parts. In FDA studies, spinach was the most frequently found leafy green to contain the more potent pesticides, especially the organophosphates (neurotoxins) and permethrin (noted as mildly carcinogenic).

Grapes
All grapes contain cleansing fibers, B-vitamins and vitamin C, plus some minerals from the soil. Red grapes contain many phytonutrients, including the healthy proanthocyanadins, which appear heart protective. Unless they are organically grown, however, grapes may receive multiple applications of a variety of chemical agents during their growing period. Many fruits, including grapes, ripen quickly and attract insects and molds. Thus, they tend to be more heavily treated in order to get them to the market (and to protect the financial interest of the grower). FDA research indicates that imported grapes are even more heavily treated than the U.S. samples. During winter and early spring, almost all grapes available in the U.S. are from Chile, and these are found to have an exceptionally high percentage of pesticide residues (79%). They also have a higher percent of the carcinogenic pesticides, captan and iprodione. However, U.S. grape growers use high amounts of sulfites and the fumigant, methyl bromide, so these are all good reasons to buy organic grapes and grape juices.

Rice
This is the most frequently consumed food on the planet. And this high-fiber, low-fat staple has many B-vitamins and minerals, including the important anti-oxidant, anti-cancer mineral, selenium. You should seriously consider buying organically grown rice and rice products, especially if it is one of your staple foods. The dangerous herbicide 2,4,5-T was sprayed on rice before being banned in 1984, and many persistent water-soluble herbicides and insecticides have been found to contaminate the ground water near major rice fields, such as in California's Sacramento River Valley. I suggest buying organic rice in bulk. You'll find that this way it's as economical as non-organic pre-packaged rice and much safer.

Cruciferous Vegetables (Broccoli, Cabbage, Brussels Sprouts, and Cauliflower)
Because of their healthy anti-cancer phytonutrients, vitamin and mineral content, high-fiber and low-calories, these are excellent foods to eat regularly. But since we eat the parts that may have been sprayed with carcinogenic chemicals, it's best to eat the organically grown versions of these vegetables.

Apples
A staple in many diets, they contain cleansing fiber, detoxifying pectin, and many nutrients. However, most apples have been found to be nearly as contaminated as strawberries. Forty eight different pesticides were detected by FDA testing in nearly 2500 samples from 1984 to 1991, while 36 different chemicals were found in their 1992 to 1993 evaluations. Nearly half of these 36 were either neurotoxic or carcinogenic chemicals. In the FDA analyses, apples and peaches were the two crops with the greatest number of different pesticides per crop--seven! Fortunately, a shift away from spraying the orchards is occurring in some areas; about 70% of the apple growers are using organic practices and integrated pest management. If you buy non-organic apples, be sure to peel them and discard the skin before you eat them since most of the chemical residues are on the apple skins. We might want to change our saying to "an organic apple a day keeps the doctor away."

Almonds and Sunflowers Seeds
These nutrient-rich life forms of Nature contain most vitamins and minerals as well as the vital essential fatty acids (EFAs). They also can hold more pesticides and other chemicals in their oils, since many are attracted to oil more than water. They are compact essences of nutrition with many B-vitamins, minerals (even hard-to-find minerals like zinc and selenium), and healthy, tissue-feeding essential oils. It is wise for humans to consume the freshest low-salt samples of these "mini-vitamins." Add to this list some pumpkin seeds, walnuts, pine nuts, and sesame seeds.

Tomatoes & Sweet Peppers (even though I wanted to say "Sweet Potatoes")
These "fruits of the vine" are full of healthy nutrients that include vitamin C, B-vitamins, carotenoids, and other phytonutrients, especially the prostate-helpful and tissue-supporting lycopenes. Both red and green bell peppers were found to have many pesticide residues from the most neurotoxic of the pesticides. In the FDA's measurement of both U.S. and Mexican crops, 64% of peppers contained at least one pesticide, while 36% contained two or more. These vegetables also may be waxed which makes it difficult to remove the residues and other chemicals within the waxes. One study found that as many as 30 different pesticides are used to spray tomatoes. Because the skins of tomatoes are thin and absorbent, and since this is a staple in many salads, soups and sauces, tomatoes are worth buying organically grown. At certain times of year, the price of organic plum tomatoes is competitive with non-organic varieties. And farmer's markets may be the best source of all for fresh unsprayed tomatoes, or better yet, grow your own.

A couple other classes of fruits and vegetables that are healthy for us are also best looked for and consumed from organic growing and shipping practices include:

Tropical Fruits
Although wonderfully tasty and high in carotenes and continuing many other nutrients and enzymes, pineapples, papayas and mangoes are very attractive to tropical pests and may be more heavily treated during cultivation, storage, and shipping. Because of their thin skins, they tend to absorb the sprays, creating higher levels of chemical contamination. We call these systemic pesticides, and they cannot be washed away such that they get into our systems as well.

Imported Produce
This usually out-of-season produce is often heavily treated for easier growing and shipping to the United States. There is also risk of higher toxicity from the use of chemicals that have been banned in the U.S. Cantaloupes and other imported melons were found to have a high concentration of pesticides in two thirds of tested samples. In Mexican cantaloupes, 48% had two or more residues.

Shop Locally

Ideally, it is healthiest to eat foods grown and cultivated near our area and in the season they are harvested. Seasonal eating is one of the keys to a balanced and wholesome diet. These foods are the freshest, often the most economical, and usually less treated, even non-organic, because they don't need to be protected for shipping long distances. Eating as much as possible from Nature, the bounty of Mother Earth, is a key message for healthy nutrition.

Other Healing Foods that may or may not be available organically grown include: oily (omega-3 oils) fish like Salmon, Olives and Olive Oil, Wild Berries or Blueberries, and Garlic and Ginger.

Important note about Milk Products and Eggs; also Wheat and Corn

Because pesticides are pervasive and stored in higher amounts in the fats of food, dairy products tend to retain higher levels of residues and chemicals from feeds and other sources. This is not well researched yet; however, it makes total sense to me, and therefore my family with growing children is buying organic milk products.

Milk is a common source of the herbicide atrazine (a known endocrine-disrupter) and the growth hormone BGH which has been genetically engineered to boost milk production.

Eggs are one of the more bio-available proteins especially for growing folks, pregnant women, and those needing a protein source, especially if you digest them well and aren't allergic to them. They have many nutrients that feed the body tissues, the sexual glands, sperm and eggs, and hormones. However, eggs are typically produced in factory farms where the hens often live in crowded, unhygienic conditions. This may be one of the reasons that salmonella bacteria are found in eggs so frequently. More than two million eggs each year are contaminated, resulting in more than a half million cases of food poisoning. Factory farm eggs also may be lower in nutrients than organic ones, and they don't taste as good as farm fresh eggs from the free-ranging chickens that are not fed antibiotics. Our best egg option is organic eggs, which are now becoming more available.

Wheat is another staple in the American and world diet. It has many vitamins, minerals, and fiber. However, in a recent review of pesticide residues, 91 percent of the wheat sampled by the FDA contained pesticide residues! Wheat can be one of the most heavily treated grains, because it is stockpiled as a basic commodity and fumigated periodically to keep down pests. When it is milled, the outer coating--the bran included in whole wheat bread and cereals--is the portion that receives the most chemical treatment. The bran and germ portion of the wheat also retains the most residues. It has been suggested that some forms of so-called wheat allergy, which has been associated with learning problems and difficulty in concentrating, may actually be a neurotoxic reaction to the pesticide residues in the grain. These pesticides are by definition neurotoxins that is how they affect the insects they are intended to destroy.

Corn contains most B vitamins, especially niacin, and adds helpful fiber to the diet. A primary staple in the American diet, corn is typically heavily treated. Locally grown fresh corn tends to be treated less, so sweet corn on the cob is likely safer than corn byproducts, which may have more contamination. However, corn is still heavily treated with the herbicide atrazine and it is also typically sprayed after harvesting.
