A colorful, satisfying bowl of chili packing plenty of flavor (even for the heartiest meat eaters), this spicy vegetarian chili is a great choice to satisfy your family's chuck wagon cravings.
Note, for all of the following ingredients, it's best to find and use organic or locally grown vegetables and fruits whenever possible.
Ingredients Needed:
Heat the oil in a large pot over medium heat and sauté the onions, carrot, celery, peppers, and garlic for 10 to 12 minutes until the vegetables are softened but not fully browned. Add chopped chipotle peppers (depending on your preference for "spiciness"), oregano, cumin, chili powder, and salt. Stir to blend. Add tomatoes and purified water. Simmer gently over low heat, uncovered, for 45 minutes. Add the beans and continue simmering an additional 30 minutes. Garnish individual bowls with optional toppings such as the suggested scallions or whatever you desire.
