Ingredients Needed:
In a heavy saucepan, place rice, water, and salt and bring to a boil. Decrease the heat and cook covered over low heat for 40 minutes. Do not uncover until the rice is done. Remove from the heat and uncover.
Stir in 1 can of coconut milk and the agave nectar into the rice and bring to a boil. Reduce the heat to a simmer and cook. Stir frequently, about 5 minutes, or until thickened. Remove saucepan from the heat and stir in the vanilla extract. Let cool to room temperature, then refrigerate. Skim the cream off the top of the second can of coconut milk and set aside (Save the remaining coconut milk for another purpose). To serve, spoon the rice pudding into individual bowls. Arrange the mango, banana, and pineapple slices around the pudding and drizzle coconut cream on top. Garnish by sprinkling toasted coconut and serve immediately.
