Avocado Lime Salsa

An awesome accompaniment to any grilled organic meat or Tex-Mex treat.

Ingredients:

2large avocados
2medium tomatoes (seeded and chopped fine)
1medium red onion (chopped fine)
6tablespoons fresh lime juice
1tablespoon extra virgin olive oil
1 1/2teaspoons sea salt (or to taste)
1medium jalapeno (seeded and minced - optional)
1clove fresh garlic
black pepper (to taste)

Instructions:

1. Halve, pit, and peel avocados. Chop avocados into tiny bits and in a medium mixing bowl stir together with remaining salsa ingredients. Salsa may be made 4 hours ahead and chilled, covered.
