Grilled Shrimp on Lemongrass Skewers

Here's a great, tasty, quick and easy recipe that works well as an appetizer or an entrée. Add just the right zing and crunch to large succulent shrimp. Lemongrass skewers add a refreshing flavor and will give your family and friends one more thing to delight over.

Serves 4-6

Ingredients Needed:

  • 1 1/2 lbs (24) jumbo shrimp, peeled with tails
  • 4 stalks fresh organic lemongrass
  • 1/4 cup fresh-squeezed organic lime juice
  • 1/4 cup tamari soy sauce
  • 1/4 cup organic sesame oil
  • 2 tbs toasted organic sesame seeds (optional)

Use the green part of lemongrass stalks. Cut the stalks in half lengthwise so you have 8 skewers. Let them sit in cold water 15 minutes. Add the tamari, sesame oil and lime juice in a small bowl and whisk. Pierce shrimp with a conventional skewer or paring knife. Then insert the lemongrass skewers through 3 shrimp. Lay the skewered shrimp flat in a non-reactive dish to coat the shrimp with the sauce. After it marinates for 20 minutes, grill them on an indoor grill or over hot coals. It only takes about 2 to 3 minuets for each side to cook. Look for shrimp to turn pink and get a little firm. Add sprinkles of sesame seed to your liking and serve.
