Organic Blueberry Pomegranate Sauce

Serves 8 to 10

Are you looking for the perfect sauce to serve with roast turkey or pork? This fruit sauce is rich with antioxidants. Its light aromas of citrus and fresh ginger, complimented by ruby-red pomegranate seeds for an eye-opening garnish, will make it a holiday favorite. Gluten-Free, Vegetarian Friendly

Ingredients Needed:

  • 1 cup organic pomegranate juice
  • 1 tablespoon minced organic fresh thyme
  • 1 tablespoon minced organic fresh ginger root
  • zest of one medium organic orange
  • juice of one medium organic orange
  • 1 1/2 tablespoons locally grown honey
  • 1/4 teaspoon cloves
  • 4 1/2 cups frozen organic blueberries (about 2 bags)
  • pinch of sea salt (we recommend Himalayan crystal salt)
  • juice of 1/2 medium organic lemon
  • pomegranate seeds for garnish

In a medium saucepan combine pomegranate juice, thyme, ginger root, orange zest and juice, honey and cloves over medium heat. Bring to a simmer and cook until the mixture has reduced by half, about 10 minutes. Add frozen blueberries and continue to cook, stirring occasionally, until the sauce is concentrated and slightly thickened, about 8 to 10 minutes. Remove from heat and sprinkle with salt and lemon juice. Cool and serve lukewarm or chilled.
