Herbed Potato Salad

Take your potato salad to the next level. Try tossing in a few "secret herbs" and your make your plain ol' potato salad something special.

Prep time: 30 minutes, Chill time: 2 hours, Serves 4-6

  • 8 red potatoes, boiled and cut into 1/8 chunks
  • 3/4 cup Italian salad dressing
  • 1 yellow onion, diced
  • 1 cup celery, diced
  • 2 cups Kosher Dill Pickles, diced
  • 6 Organic Eggs, hard boiled and diced
  • 1/4 cup Yellow Mustard
  • 1/2 cup mayonnaise
  • 1 Tbsp. fresh parsley, finely diced
  • 1 Tbsp. fresh basil, finely diced
  • 1 Tbsp. paprika
  • Salt and pepper to taste

Combine potatoes, Italian salad dressing, onion, celery, pickles, salt and pepper. Cover and chill for 2 hours.

Once chilled, add eggs, mustard, mayonnaise and mix well. Garnish with a sprinkling of fresh herbs. (We like to add a few sprigs of fresh dill or fennel, ourselves. But be creative and play with different mouthwatering combinations.)
