Roasted Corn and Fresh Tomato Salad

Simply one of the most versatile recipes you'll find, this spectacular salad works especially well alongside seafood. It artfully combines the flavors of fresh basil, tangy feta, roasted corn and juicy cherry tomatoes and can also be eaten as a light lunch. Bon appetite!

Note, for all of the following ingredients, it's best to find and use organic or locally grown vegetables and fruits whenever possible.

Prep time: 1 hour, Serves 4-6

Ingredients Needed:

  • 4 ears of organic corn
  • 2 pints of fresh organic cherry tomatoes, cut in half
  • 1/4 cup feta, diced
  • 2 Tbsp. minced shallot
  • 1 tsp. chopped fresh organic thyme
  • 2 tsp. chopped fresh organic basil
  • 2 Tbsp. Organic Olive Oil
  • 2 Tbsp. Organic white balsamic vinegar
  • salt and freshly ground black pepper, to taste

Peel corn and soak in salted water for 45 minutes and then drain and pat dry. Roast the ears of corn, rotating under a hot broiler or on a grill until kernels are tender and slightly brown, about 5-10 minutes.

After cooled down enough to handle, remove kernels by running a knife down the cob lengthwise. In a large bowl, mix all ingredients. Taste and adjust seasonings if desired.
